Actually, the best time to take this kind of subject with a simple point and shoot camera is to shoot it at dusk, when there is still enough light to shoot the rides at a reasonably fast shutter speed, and when the ride’s lights are turned on for their colorful effect.

Take a LOT of shots to make sure that, at least, some of them will come out looking good.
